Famous for his contemporary interpretations of Latin cuisine, Chef Richard Sandoval was inspired by the Vail Valley’s active lifestyle when crafting menus for Cima. Blending traditional Latino flavors with global ingredients and cooking techniques, Sandoval’s vibrant lunch, dinner and Latin brunch are replete with fresh market produce, sustainable seafood, locally raised meats and specialty products from local purveyors.

With numerous selections of tequila, pisco, cachaça and other regional liquors, Cima’s bar is a showcase for Latin spirits. Guests may sip their selections or choose from fresh, hand-muddled cocktails. Enjoy a bottle of wine or a signature cocktail in Cima’s Redondo, a cozy nook adjacent to the energetic bar with a fire-pit table and circular view.

Located at the nearby Westin Riverfront Resort & Spa, Cima’s 70-seat outdoor terrace features several fire pits, a full-service bar and unmatched views of Eagle River and Beaver Creek Mountain. Group events are welcome; the versatile dining room and banquet salons offer the perfect venue for your next event.
